Steamed Chicken With Cordyceps Flowers and Shitake Mushrooms (虫草花香菇蒸鸡)





Steam chicken is the easiest way of cooking with health benefits, and delicious flavor. Just simply marinate the bite sized pieces of chicken for minutes to obtain a basic flavor then steam for 20 to 25 minutes. That’s so simple.

My husband loves steam food. This is due to the fact that steaming food is nutrient preservation, calorie and fat reduction. Additionally, it keeps the natural flavor to the maximum.

Normally, I will add mushrooms, lily blossoms and black fungus for additional texture. For this recipe, I replace the lily blossoms with cordyceps flowers. It is a type of orange-yellow grass and it’s good for nourishing the lungs and kidneys, protecting the liver, nourishing skin and beauty, and improving immunity. It is extremely delicious when used to make soup or steam dishes!

You don’t have to add water to the chicken, the marinade, chicken, and mushrooms release a broth-like mix of fluids that tastes amazing over rice.

INGREDIENTS

3 whole chicken legs (cut into bite-sized pieces)

50g dried cordyceps flowers

5g dried black fungus or wood ear mushrooms

4 medium-sized dried shitake mushrooms

50g shredded ginger

5 red dates

1 tbsp goji berries

 

Seasoning

½ tsp salt

2 tbsp light soy sauce

1 tbsp oyster sauce

1 tbsp Shaoxing wine

2 tsp sesame oil

1 tsp white pepper

½ tbsp corn starch

 


METHODS

1. Wash and soak the shitake mushrooms, black fungus and dried cordyceps flowers in water separately until soft.

2. Cut the soften shitake mushrooms into smaller pieces.

3. Shredded the ginger; rinse the red dates and goji berries and drain well.

4. Place the bite-size chicken pieces on steaming plate. Spread the shredded ginger and add all the seasoning to the chicken.

5. Spread softened black fungus, mushrooms, cordyceps flowers and red dates over the top, mix well. Then sprinkle the goji berries on top of all the ingredients.

6. Place the steaming plate in a steamer and steam over medium heat for 20 -25 minutes.
