Creamy Baked Fried Rice with White Sauce

This baked fried rice looks like pizza from the top but Asian food beneath. My son always likes to order this baked fried rice from his favourite restaurant. Ever since I learned how to make lasagna then I realized that this baked fried rice is actually very easy to make at home. As far as you know how to make the white sauce, also known as Bechamel sauce. It is a perfect complement to many dishes.

This baked fried rice is so much value for money as compared to eating them outside. Why would I mention this dish is value for money? Because I turned the leftover rice into some egg-fried rice with diced carrots, French beans, and some frozen crab sticks which were seared with melted butter. You can replace them with braised pork ribs, curry chicken, sausages, or bacon as you wish.  Then top with this signature white sauce and shredded mozzarella and cheddar cheese. Then pop it into the oven for a quick melt. How easy was that?

I will always make extra and keep it in the fridge. During the morning rush on school weekdays or weeknight dinner, having those baked fried rice prepared and ready to pop into the microwave for kids’ breakfast makes a significant difference.

What type of bakeware to use?

I baked my fried rice in a ramekin cup (2” deep, with a diameter of 4”) or an aluminum disposable cup for serving individual portions. You can also bake it in a casserole pot serving it as a family dinner.

Type of cheese to use

Cheddar and Mozzarella both are famous cheeses and are widely used in western dishes. Mozzarella cheese is the king of meltiness for cheese toppings and it creates an ooey gooey texture that adults and kids always love. Cheddar cheese is famous for its unique and sharp taste. People use it in dishes for an extra flavour which gives the food a stronger taste level.

This baked fried rice is so creamy with the cheddar and mozzarella cheese melted in the white sauce, rich, and delicious! What’s not to like?

 

INGREDIENTS

3 cups of fried rice

6 crab sticks, cut into half

2 tbsp butter, to make the white sauce

1 tbsp butter, to sear the crab sticks

150g shredded mozzarella cheese

150g shredded cheddar cheese

1 tbsp plain flour or all-purpose flour

150 – 200ml milk

Some salt and black pepper to taste

 


METHOD

1. Melt 1 tbsp of butter in a frying pan, add crab sticks and sear each side until a brown crust has formed.

2. Melt 2 tbsp of butter in a saucepan and stir in 1 tbsp of flour and cook over low heat, stirring constantly, until the mixture is smooth and bubbly. Remove from heat.

3. Gradually stir in milk, return to heat, and stir until thick and smooth. Season with salt, pepper, mozzarella, and cheddar cheese (reserve some for topping later), stirring over low heat until cheese melts.

Note:

The white sauce will turn thick after cooling, just whisk in more milk until the desired consistency is reached; if it is too thin, either simmer it down, allowing evaporation to thicken the sauce up.

4. Preheat oven to 220 degrees Celsius. Scoop the fried rice into the ramekin cup (70% full) and cover the fried rice with 2 – 3 tbsp of white sauce. Sprinkle with the reserved mozzarella and cheddar cheese at the top. Bake in the oven for 20 – 25 minutes until the cheese is all melted with a golden-brown topping.
