Nourishing Apple White Fungus Dessert Soup (苹果白木耳糖水 )
Whenever I’m down with flu, cough, dry throat, or constant thirst, I love making this comforting Chinese dessert soup. It is light, soothing, naturally sweet, and especially comforting when served warm. The combination of apples, white fungus, red dates, and goji berries creates a nourishing dessert soup that feels gentle on the throat and stomach.
This traditional sweet soup is simple, naturally nourishing, and incredibly comforting to sip warm. The combination of ingredients creates a gentle sweetness while helping to hydrate the body and soothe the throat.
What makes this version extra comforting is the addition of a little milk before serving. It gives the soup a creamier texture and a smoother taste while balancing the natural sweetness of the ingredients beautifully.
Why This Dessert Soup Feels So Comforting
Apples (苹果)
Apples add natural sweetness and are believed to help moisturize the lungs and throat. After simmering, the apples become soft and release a light fruity flavor into the soup. They are also rich in vitamins and hydration, making the soup refreshing and easy on the stomach when recovering from flu.
White Fungus (白木耳)
White fungus, also known as snow fungus, is often used in Chinese soups and desserts for its nourishing properties. Once cooked, it develops a soft and slightly gelatinous texture that many people believe helps soothe dry throat and relieve internal dryness.
It is especially popular during hot weather or when experiencing cough, throat irritation, or dryness from lack of rest.
Red Dates (红枣)
Red dates add natural sweetness and a comforting aroma to the soup. In Chinese home cooking, they are commonly used in nourishing soups because they are believed to help replenish energy and support recovery after feeling weak or tired.
Goji Berries (枸杞)
Goji berries bring a gentle sweetness and beautiful color to the dessert soup. They are often added to nourishing soups and teas and are commonly associated with supporting overall wellness and recovery.
Rock Sugar (冰糖)
Rock sugar gives the soup a clean and mellow sweetness without being overpowering. Many Chinese dessert soups use rock sugar because it creates a smoother taste compared to regular sugar.
Why Add Milk Before Serving?
Adding milk before serving gives the dessert soup a richer and creamier texture without overpowering the natural flavors of the ingredients. The milk softens the sweetness of the rock sugar and creates a smoother, more comforting finish.
The combination of milk and white fungus also makes the soup feel extra silky and soothing, especially for dry throat and irritation caused by cough or flu. Since the soup itself is light and refreshing, the milk adds a gentle creaminess that makes it feel more nourishing and satisfying.
Another reason to add milk only before serving is to preserve its fresh taste and prevent it from overcooking during steaming. This keeps the soup smooth, fragrant, and balanced.

4 red dates (红枣), sliced
Water, filled up to 80% of the steaming bowl
Some milk(optional), for serving
METHOD
1. Soak the white fungus with water and vinegar for 30 minutes to soften it and remove the dust, then trim away from the hard center and cut into smaller pieces.
2. Soak the red dates and goji berries. And cut the red dates to smaller pieces to release more flavor.
3. Add the apples, white fungus, red dates, goji berries, and rock sugar into a steaming bowl.
4. Pour water until about 80% full and give it a good stir.
5. Steam for 30 minutes at high heat until the apples and white fungus become soft and tender.
6. Serve warm as it is. Or pour in some milk before serving if desired for a creamier and smoother taste.
Tips for Making Apple White Fungus Dessert Soup
1. Soak white fungus properly
Make sure the white fungus is fully soaked until soft and expanded. Remove the hard yellow core at the center to improve texture and make the soup smoother.
2. Cut it into small pieces
Cutting the white fungus into smaller pieces helps it release more natural gelatin, giving the soup a nicer silky, slightly thick texture.
3. Cut ingredients smaller for better flavor
Cut apples into small chunks and slice red dates so they cook faster and release more natural sweetness into the soup.
5. Adjust sweetness at the end
Adjust the sweetness to your taste after cooking, as the natural sweetness from apples and red dates will also come out during steaming.
