INGREDIENTS

700g pork ribs (chopped into small pieces)

½ pineapple (cut into big chunks)

1 tbsp rock sugar (to caramelize)

50ml water

1 stalk spring onion

20g ginger sliced

Seasoning

1 tbsp oyster sauce

1 tbsp light soy sauce

1 tsp dark soy sauce

1 tbsp rock sugar

25ml Shaoxing wine

METHOD

1. Combine the cornstarch and water with the ribs. Let it soak for 15 minutes. Wash off the blood and drain it for later use.

2. Heat a saucepan over medium-high heat. Add the pork ribs and sear over high heat for 3–5 minutes, until they are lightly browned on all sides. Add 1 tablespoon of rock sugar and let it melt, coating the ribs with a light golden caramel. Be careful not to let the sugar burn. 

3. Cut the pineapple into big chunks. 

4. Transfer the seared pork ribs and pineapple chunks to a pressure cooker. Add the spring onion, sliced ginger, and all the seasonings. Stir well to coat the ribs evenly. Do not add any water, as the pineapple will release plenty of natural juice during pressure cooking. 

5. Secure the pressure cooker lid. Once full pressure is reached, reduce the heat to medium-low and cook for 10 minutes.

6. Turn off the heat and allow the pressure to release naturally before opening the lid.

7. If the sauce is slightly thin, transfer the contents to a saucepan or leave the lid off (if your pressure cooker allows) and simmer over high heat for 2–3 minutes until the sauce thickens and lightly coats the ribs and pineapple.
