My Kids Thought These Were Fried Prawns! Crispy Cauliflower Fritters
Looking for a delicious way to get kids to eat more vegetables? These Crispy Fried Cauliflower Fritters might just do the trick!
When my kids were still young, I made these cauliflower fritters one day, and they had no idea what they were eating. They thought they were some kind of fried prawn or something similar!
To my surprise, they loved them so much and even asked me to make them again. That’s when I knew this was a recipe worth keeping!
The cauliflower is coated in a light, crispy batter and deep-fried until golden and crunchy. They’re crispy, delicious, and seriously addictive. Honestly, they don't feel like you're eating vegetables at all.
Why You'll Love These Cauliflower Fritters
1. Kid–friendly – A great way to sneak more vegetables into a child's meal.
2. Crispy and addictive – Best eaten freshly fried when the coating is at its crunchy.
3. Simple ingredients – Nothing complicated is needed.
4. Make-ahead friendly – The batter can be prepared up to 2 days in advance and kept refrigerated.
5. Fry only what you need – You don't have to cook the whole batch at once.
The Secret to a Crispy Batter
There are two little tricks I use to get that lovely light and crispy coating — cold water and baking powder.
Using cold water helps keep the batter light and creates a temperature contrast when the cold batter hits the hot oil. As the water quickly turns into steam during frying, it helps create a lighter, crispier texture.
Baking powder is another key ingredient for crispy fritters. When it meets moisture and heat, it releases carbon dioxide gas, creating tiny bubbles in the batter. These little air pockets help make the coating lighter, puffier, and crispier instead of dense and heavy.
So, cold water + baking powder + properly heated oil are my little tricks for getting that delicious crispy coating.
Just make sure the oil is hot enough before frying. If the oil is not hot enough, the batter can absorb more oil and become greasy instead of crispy.
The Secret to a Crispy Batter
One little trick I use when making the batter is adding cold water. Why does cold water help make the batter crispy?
When cold batter hits the hot oil, the sudden temperature difference helps the batter set quickly. The water in the batter also turns into steam during frying, which helps create a lighter and crispy coating.
For the best result, use the batter while it is cold and make sure your frying oil is hot enough before adding the cauliflower.
Make Ahead Tip
These fritters are best eaten freshly fried, when they are hot and crispy.
If you don't think you'll finish the whole batch at once, there's no need to fry everything.
Simply coat and fry the amount you can eat, then keep the remaining batter covered in the refrigerator for up to 2 days. When you're ready for more, just take it out and fry another batch.
This makes them especially convenient when you're cooking for the family — you can enjoy freshly fried cauliflower whenever you want!
A Sneaky Way to Eat More Vegetables
I love recipes like this because sometimes getting children to eat vegetables can be a challenge. But when vegetables are turned into something golden, crispy and delicious, they suddenly become much more appealing. My kids certainly didn't complain when they thought they were eating fried prawns!
So, if you have little ones who aren't big fans of cauliflower, give these fritters a try. You might be surprised by how quickly they disappeared!
Full written steps, tips, and exact measurement are below. Keep Scrolling!
INGREDIENTS
1 whole Cauliflower (±300g), cut into bite-sized florets
120g plain flour
120g cornstarch or rice flour
1 tsp salt
1 tsp white pepper
1 tsp baking powder
240ml cold water
1 stalk coriander leaves, chopped
1 tsp black sesame seeds
2-3 tbsp golden breadcrums
Some vegetable oil for frying
METHOD
1. Prepare the cauliflower
Cut the cauliflower into bite-sized florets and wash thoroughly. Drain well.
2. Make the batter
Combine all the batter ingredients in a bowl. Add cold water gradually and mix until you have a smooth batter that is thick enough to coat the cauliflower evenly.
Do not make the batter too thick, as you want the finished coating to be light and crispy.
3. Coat the cauliflower
Pour all the cauliflower floret into the batter, stir and mix, making sure it is evenly coated. Then coat them generously with golden breadcrumbs for extra crunch.
4. Deep-fry
Heat the oil until hot. Carefully place the battered cauliflower into the hot oil and fry until golden brown and crispy.
Avoid overcrowding the pan, as this can lower the oil temperature and result in less crispy fritters.
5. Double fry for extra crispiness
For an even crispier coating, remove the cauliflower fritters once they are cooked and golden brown. Let them rest for a few minutes.
Increase the oil temperature slightly, then return the cauliflower fritter to the hot oil and fry for another short time until deeply golden and extra crispy.
Drain on a wire rack or paper towel before serving.
Tips for the Best Crispy Cauliflower Fritters
1. Use cold water for the batter.
This helps give the coating a lighter, crispy texture.
2. Keep the batter cold.
If you're making the batter ahead, store it covered in the refrigerator and give it a gentle stir before using it.
3. Don't overcrowd the oil.
Frying too much at once will cause the oil temperature to drop, making the fritters less crispy.
4. Eat them freshly fried.
Like most fried foods, these are at their best when they're hot and crispy straight from the oil.
5. Only fry what you can finish.
You can keep the remaining batter refrigerated for up to 2 days and fry another batch later.
